泰式酸辣海鮮 Thai Hot & Sour Seafood

材料:
白蝦8尾、透抽1尾、紅辣椒2根、洋蔥1/2顆、蔥1根、九層塔3根、香茅1根、大番茄1顆

Ingredients:
8 Whole White Shrimp, 1 Squid, 2 red hot chili peppers, 1/2 of a yellow onion bulb, 1 stalk of green onion, 3 sprigs of basil, 1 lemon-grass root, and 1 large tomato

調味料:
泰式酸湯醬1大匙、奶油30公克、檸檬葉6片、檸檬汁1小匙、水800cc、砂糖少許

Seasoning:
1 tablespoon of Thai sour soup sauce, 30 grams of butter, 6 lime leaves, 1 teaspoon of lemon juice, 800cc of water, and a little sugar.

作法:
1. 將白蝦洗淨去沙筋;透抽洗淨切小圈,備用。
2. 紅辣椒切片;洋蔥切絲;蔥和香茅切小段;大番茄切小塊備用。
3. 取一支湯鍋,倒入少許沙拉油,再放入作法2的材料以中火先爆香,接著加入所有調味料,以中火煮約10分鐘。
4. 於作法3的鍋中放入作法1的白蝦與透抽圈,續煮約5分鐘,起鍋前加入九層塔拌勻即可。

Preparation Method:
1. Wash out the white shrimp to get rid of sediment; wash out the squid and slice it into small rings. Set it aside.
2. Slice the red hot peppers; dice the yellow onions, cut the green onions and lemongrass into small pieces. Slice the large tomato alternately into small chunks and set it aside.
3. Heat a frying pan over medium heat and put in the vegetable ingredients along with a little salad oil. Stir-fry over medium heat, add in all the seasonings ( not include the lemon juice and butter ) and let simmer for 10 minutes
4. pour in the shrimp and squid ,then add lemon juice and butter , then finish it by stirring in the basil.
